Ingredients
For the Burrito Filling:
- 1 lb ground beef or ground chicken
- 1 medium onion, chopped
- 2 cloves garlic, minced
- 1 packet taco seasoning (or homemade seasoning)
- 1/2 cup water
- 1 cup cooked rice (optional)
- 1 cup refried beans (or black beans)
- 1 cup shredded cheddar cheese (or Mexican cheese blend)
- 4 large flour tortillas
For the Wet Burrito Sauce:
- 1 (10 oz) can red enchilada sauce (or homemade)
- 1/2 cup salsa (your choice of mild, medium, or hot)
- 1/2 cup beef or chicken broth (optional for thinner sauce)
- 1 teaspoon ground cumin
- 1 teaspoon chili powder
- Salt and pepper, to taste
For Topping (optional):
- Shredded lettuce
- Diced tomatoes
- Sour cream
- Jalapeño slices
- Extra shredded cheese
Instructions
- Prepare the Filling:
- In a large skillet, cook the ground beef or chicken over medium heat until browned, breaking it up as it cooks. Drain any excess fat if necessary.
- Add the chopped onion and garlic, cooking until softened, about 3 minutes.
- Stir in the taco seasoning and water (or as directed by the seasoning packet). Let it simmer for 5 minutes until the mixture thickens.
- If using rice, stir in the cooked rice and refried beans (or black beans) to the meat mixture. Set aside.
- Make the Wet Burrito Sauce:
- In a separate saucepan, combine the enchilada sauce, salsa, beef or chicken broth, cumin, chili powder, salt, and pepper. Bring to a simmer and let it cook for 5 minutes to blend the flavors. Adjust seasoning to taste.
- Assemble the Burritos:
- Warm the flour tortillas in a dry skillet or microwave for a few seconds to make them pliable.
- Spoon a generous amount of the beef and rice mixture onto the center of each tortilla. Top with a little shredded cheese, then roll up the tortilla, folding in the sides to secure the filling.
- Cook the Wet Burritos:
- Preheat your oven to 350°F (175°C). Place the burritos seam-side down in a baking dish.
- Pour the prepared wet burrito sauce over the top of the burritos, ensuring they’re well-covered.
- Sprinkle additional cheese on top of each burrito.
- Bake for 20-25 minutes, or until the cheese is melted and bubbly.
- Serve:
- Remove the wet burritos from the oven and serve immediately with your choice of toppings like shredded lettuce, diced tomatoes, sour cream, jalapeños, or more cheese.
