Ingredients
- 2 cups granulated sugar
- 1/2 cup whole milk
- 3/4 cup unsweetened cocoa powder
- 1/4 cup unsalted butter, cut into small pieces
- 1 teaspoon vanilla extract

Instructions
- Prepare the Pan:
- Line an 8×8-inch baking dish with parchment paper or grease it with butter. Set aside.
- Mix the Ingredients:
- In a medium, heavy-bottomed saucepan, combine sugar, cocoa powder, and salt. Stir in the milk until everything is well blended.
- Cook the Mixture:
- Place the saucepan over medium heat. Stir the mixture continuously until the sugar has dissolved and it starts to come to a simmer.
- Attach a candy thermometer to the side of the pan. Allow the mixture to simmer without stirring until it reaches the soft ball stage, or 234°F (112°C). This should take about 15-20 minutes.
- Cool the Fudge:
- Remove the saucepan from the heat and add the butter and vanilla extract. Do not stir. Let the fudge cool to 110°F (about 10-15 minutes).
- Beat the Fudge:
- Once cooled, beat the fudge vigorously with a wooden spoon until it begins to lose its gloss and thickens (about 5-10 minutes). This step gives the fudge its creamy texture.
- Pour into the Pan:
- Pour the fudge mixture into the prepared pan and smooth the top with a spatula. Let it sit at room temperature until fully set, about 1-2 hours.
- Cut and Serve:
- Once set, cut the fudge into small squares. Enjoy!
