Ingredients

  • 2 cups cooked rice (white or jasmine rice works well)
  • 1/2 cup grated Parmesan cheese
  • 1/2 cup shredded mozzarella cheese (optional for extra cheesiness)
  • 1/4 cup bread crumbs
  • 1 large egg
  • Salt and pepper, to taste
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/2 cup bread crumbs (for coating)
  • Cooking spray or a little oil for baking/frying

Instructions

  1. Blend the Rice Mixture:
    • Add the cooked rice, Parmesan cheese, mozzarella cheese, 1/4 cup bread crumbs, egg, salt, pepper, garlic powder, and onion powder to a blender or food processor.
    • Pulse the ingredients together just until the mixture is combined and holds together. Avoid over-blending to keep some texture.
  2. Form the Rice Balls:
    • Scoop out about 1-2 tablespoons of the mixture and roll it into a small ball. Repeat with the rest of the mixture to make about 12 rice balls.
  3. Coat the Rice Balls:
    • Roll each rice ball in the remaining bread crumbs to coat evenly. This will give them a nice, crispy outer layer.
  4. Cook the Rice Balls:
    • For Air Fryer: Lightly spray the rice balls with cooking spray and place them in the air fryer. Cook at 375°F (190°C) for 10-12 minutes, until golden and crispy.
    • For Oven: Preheat the oven to 400°F (200°C). Place the rice balls on a baking sheet lined with parchment paper, spray them lightly with cooking spray, and bake for 15-18 minutes or until golden.
    • For Pan-Frying: Heat a little oil in a skillet over medium heat. Fry the rice balls, turning occasionally, until golden brown on all sides, about 3-5 minutes.
  5. Serve:
    • Let the rice balls cool slightly and serve warm with marinara sauce or any dipping sauce of your choice.
