Ingredients

For the Meatloaf:

  • 1 lb (450g) ground beef
  • 1 lb (450g) ground pork (or use all beef)
  • 1 cup breadcrumbs
  • 1 cup shredded cheddar cheese (or your favorite cheese)
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 1/2 cup milk
  • 1 large egg
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon dried thyme (optional)
  • 1/2 teaspoon dried oregano (optional)

For the Glaze:

  • 1/2 cup ketchup
  • 2 tablespoons brown sugar
  • 1 tablespoon mustard (yellow or Dijon)

For the Mashed Potatoes:

  • 2 lbs (900g) russet potatoes, peeled and cut into chunks
  • 1/4 cup butter
  • 1/2 cup milk or cream (adjust to desired consistency)
  • Salt and pepper to taste

Instructions

  1. Preheat the Oven:
    • Preheat your oven to 375°F (190°C). Grease a loaf pan or line it with parchment paper.
  2. Prepare the Meatloaf:
    • In a large bowl, combine ground beef, ground pork, breadcrumbs, shredded cheese, onion, garlic, milk, egg, Worcestershire sauce, salt, pepper, thyme, and oregano. Mix until well combined.
    • Transfer the mixture to the loaf pan and shape it into a loaf.
  3. Make the Glaze:
    • In a small bowl, whisk together ketchup, brown sugar, and mustard. Spread the glaze evenly over the top of the meatloaf.
  4. Bake the Meatloaf:
    • Place the meatloaf in the oven and bake for 50-60 minutes, or until the internal temperature reaches 160°F (71°C). Let the meatloaf rest for 5-10 minutes before slicing.
  5. Prepare the Mashed Potatoes:
    • While the meatloaf bakes, place the potatoes in a large pot, cover with water, and add a pinch of salt. Bring to a boil and cook until the potatoes are tender, about 15-20 minutes.
    • Drain the potatoes, then add butter and milk. Mash until smooth, and season with salt and pepper to taste.
  6. Serve:
    • Spoon a generous amount of mashed potatoes onto each plate. Place a slice of cheesy meatloaf on top. Garnish with additional cheese, chives, or parsley if desired.
