Ingredients
For the Meatloaf:
- 1 lb (450g) ground beef
- 1 lb (450g) ground pork (or use all beef)
- 1 cup breadcrumbs
- 1 cup shredded cheddar cheese (or your favorite cheese)
- 1 small onion, finely chopped
- 2 cloves garlic, minced
- 1/2 cup milk
- 1 large egg
- 1 tablespoon Worcestershire sauce
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/2 teaspoon dried thyme (optional)
- 1/2 teaspoon dried oregano (optional)
For the Glaze:
- 1/2 cup ketchup
- 2 tablespoons brown sugar
- 1 tablespoon mustard (yellow or Dijon)
For the Mashed Potatoes:
- 2 lbs (900g) russet potatoes, peeled and cut into chunks
- 1/4 cup butter
- 1/2 cup milk or cream (adjust to desired consistency)
- Salt and pepper to taste
Instructions
- Preheat the Oven:
- Preheat your oven to 375°F (190°C). Grease a loaf pan or line it with parchment paper.
- Prepare the Meatloaf:
- In a large bowl, combine ground beef, ground pork, breadcrumbs, shredded cheese, onion, garlic, milk, egg, Worcestershire sauce, salt, pepper, thyme, and oregano. Mix until well combined.
- Transfer the mixture to the loaf pan and shape it into a loaf.
- Make the Glaze:
- In a small bowl, whisk together ketchup, brown sugar, and mustard. Spread the glaze evenly over the top of the meatloaf.
- Bake the Meatloaf:
- Place the meatloaf in the oven and bake for 50-60 minutes, or until the internal temperature reaches 160°F (71°C). Let the meatloaf rest for 5-10 minutes before slicing.
- Prepare the Mashed Potatoes:
- While the meatloaf bakes, place the potatoes in a large pot, cover with water, and add a pinch of salt. Bring to a boil and cook until the potatoes are tender, about 15-20 minutes.
- Drain the potatoes, then add butter and milk. Mash until smooth, and season with salt and pepper to taste.
- Serve:
- Spoon a generous amount of mashed potatoes onto each plate. Place a slice of cheesy meatloaf on top. Garnish with additional cheese, chives, or parsley if desired.
