Ingredients
- 1 1/2 lbs ground beef (80% lean is best)
- 1 packet (1 oz) French onion soup mix
- 1/2 cup bread crumbs

- 1 cup beef broth

Instructions
- Prepare the Meatloaf Mixture:
- In a large mixing bowl, combine the ground beef, French onion soup mix, bread crumbs, Parmesan cheese, milk, egg, and Worcestershire sauce. Mix until just combined, being careful not to overmix to keep the meatloaf tender.
- For a cheesy center, create a well in the center of the meat mixture and fill with shredded mozzarella or Swiss cheese. Fold the meat mixture around it to seal in the cheese.
- Shape the Meatloaf:
- Shape the meat mixture into a loaf and place it in the bottom of the crockpot.
- Prepare the French Onion Sauce:
- In a small skillet, melt the butter over medium heat. Add the sliced onions and cook until caramelized, about 8-10 minutes, stirring occasionally.
- Add the caramelized onions, beef broth, thyme, salt, and pepper to the crockpot, pouring it around the meatloaf.
- Cook the Meatloaf:
- Spread the ketchup over the top of the meatloaf.
- Cover the crockpot and cook on low for 5-6 hours, or until the meatloaf reaches an internal temperature of 160°F (71°C).
- Serve:
- Carefully remove the meatloaf from the crockpot and let it rest for a few minutes before slicing. Spoon the French onion sauce and onions over the top before serving.
