Ingredients

  • 1 zucchini, cut into large chunks

Instructions

  1. Prepare the Beef and Broth:
    • In a large pot, add the beef shank, water, onion, garlic, salt, and pepper. Bring to a boil over medium-high heat.
    • Skim off any foam that rises to the top, then reduce the heat to low, cover, and let simmer for 1 1/2 to 2 hours, or until the beef is tender and the broth is flavorful.
  2. Add Vegetables:
    • Add the corn, carrots, and potatoes to the pot and simmer for 15-20 minutes, or until they start to soften.
    • Then add the zucchini and cabbage. Continue to cook for an additional 10-15 minutes, or until all vegetables are tender.
  3. Adjust Seasoning:
    • Taste and adjust seasoning with salt and pepper as needed. Add chopped cilantro to the pot for extra flavor if desired.
  4. Serve the Caldo de Res:
    • Ladle the soup into large bowls, ensuring each serving has a good mix of beef, bone, and vegetables.
    • Serve with lime wedges, fresh cilantro, diced onion, and warm corn tortillas on the side.
